Vuurberg

Vuurberg 2003: 60 % merlot, 25 % cabernet sauvignon and 15 % cabernet franc. Single Vineyard wine, bottled november 2004.

Complexity can be described as many different flavours. We do the following to get a multi-dimensional wine

Use of 5 varieties

Accurate cultivar cloning (cab s only we have 7 different clones)

Planted on different soil types

Located between 300 and 500 m above sea level

First class hand-picked grapes

Both natural fermentation as use of natural yeasts

Slow and controlled fermentation

Use of different kinds of wood

These factors in the end can give character to the wine. Depending on vintage we vary and play. As we are a young winery we learn and see this part as the mathematical side of winemaking.

SCREWCAPS IN CELLAR

Total production 600 cases, 50% cork (49mm x 24 mm flor) and 50% screwcap. As there is much discussion about the use of these two, we decided to use them both and see how it works out. As it just stays cooler to uncork a bottle of red wine, the screwcap ensures the quality of the bottle after a few years. We can see in a couple of years what is the effect of no oxygen (reduction) at all during aging process.
